Here at Home Musings, we get cravings for Mexican food quite often! Being busy, we also like making simple hearty recipes that yield tasty leftovers. The enchilada casserole checks both of these boxes and we think you’ll agree!
Here’s what you’ll need
- Ground beef
- Cream cheese
- Taco seasoning mix
- White onion
- Salsa
- Flour tortillas
- Shredded cheese
- Enchilada Sauce
Let’s get started!
- Prepare the ground beef layer
Preheat the oven to 350°F. Dice the onions. Brown ground beef over medium heat and drain most of the fat. Once the beef is browned, add the cream cheese, taco seasoning, diced onions, and salsa to the beef in the same pan.
- Mix ingredients
Over low heat, stir ingredients until cream cheese is melted and everything is thoroughly mixed together.
- Build first layer
Spread ground beef mixture into the bottom of a casserole dish.
- Add tortilla layer
Layer the 12 small tortillas on top of the ground beef mixture.
- Add enchilada sauce and cheese
Pour the enchilada sauce and add the shredded cheese evenly on top of the tortillas.
- Bake and enjoy
Bake the enchilada casserole at 350°F for 20 minutes and serve fresh!
Some things we learned making our enchilada casserole
Yes! We used medium salsa that had a good kick to it and felt like it really added to the overall flavor of the casserole.
We would have topped it with some shredded lettuce to add a fresh element to it.
Definitely! We love our leftovers, and this was so good the next day.

Enchilada Casserole
This popular Mexican dish is even easier to make as a casserole!
Ingredients
- 1.5 lbs of ground beef
- 4 oz cream cheese
- 1 oz taco seasoning mix
- 1/2 cup diced white onion
- 1 cup salsa
- 12 small flour tortillas
- 1.5 cups of shredded cheese
- 8 oz enchilada sauce
Instructions
- Brown ground beef in skillet over medium heat
- Drain fat from ground beef through a colander
- Add 1.5 cup diced white onion, 1 oz taco seasoning mix, 1 cup salsa, and 8 oz softened cream cheese in skillet with ground beef
- Place skillet over low heat and mix all ingredients for 3 to 5 minutes
- Pour skillet contents in casserole dish and evenly smooth with spatula
- Layer 12 tortillas evenly on top of casserole
- Pour 8 oz enchilada sauce on casserole and evenly smooth on tortillas
- Sprinkle 1.5 cups shredded cheese on tortillas
- Put casserole in oven at 350°F for 20 minutes
- Remove from oven, serve, and enjoy!
Notes
We used medium salsa for a little extra heat; feel free to use mild or spicy salsa!
Use any kind of shredded cheese you like. We recommend a Mexican blend or cheddar.
