Red velvet is one of our favorite flavors of all time. I don’t know if it’s because I grew up in the south, but I’m obsessed with anything red velvet! These simple red velvet cake mix brownies have become one of my easy go-to recipes to whip up at home when I’m craving my favorite flavor combination of red velvet and cream cheese icing. It’s also perfect for Valentine’s day! To make this recipe even simpler and quicker, we used pre-made icing.
What you’ll need
- red velvet cake mix
- eggs
- vegetable oil
- cream cheese frosting
- Make the batter
Preheat the oven to 350°F and spray your 8×8 dish with non-stick spray. In a mixing bowl, mix together the cake mix, eggs, and vegetable oil. The batter will be pretty thick. Pour brownie batter into the baking dish and smooth out.
- Bake
Bake for about 20-25 minutes or until you get that great brownie edge on the sides and the inside is still slightly soft. Depending on how you like your brownies, you can adjust the bake time so that the brownies are more fudgey (less time) or more cake-like (more time). We prefer ours more cake-like so we baked it for 25 minutes.
- Pipe icing
Let your brownies cool. While the brownies are cooling, put about half of the cream cheese frosting into a piping bag fitted with your desired piping tip. If you don’t have a piping bag, you can use a sealable plastic bag and just cut a corner. You can also just forgo piping the icing and spread the icing evenly on top of the brownies. Enjoy!
What we learned making this
We baked ours for 25 minutes and we found it pretty perfect for our preferences. The edge pieces were more cake-like but the inside pieces were more a little more fudgey. If you prefer it to be less cake-like, you can definitely try baking it for a shorter amount of time.

Red Velvet Cake Mix Brownies
These thick and decadent red velvet cake mix brownies are a great way to reach your Valentine's heart!
Ingredients
- 15.25 oz red velvet cake mix
- 2 large eggs
- 1/3 cup vegetable oil
- 8 oz cream cheese frosting
Instructions
- Preheat oven to 350°F and spray an 8x8 baking dish with non-stick spray.
- Pour the cake mix, eggs, and vegetable oil into a mixing bowl and hand mix until you reach a thick consistency.
- Smooth the brownie batter into the baking dish and place in the oven. Bake for 20-25 minutes depending on your preference of softness. Bake for less time for a more fudgy consistency or bake for longer for a more cake-like consistency.
- When done baking, remove from oven and let fully cool.
- Scoop cream cheese frosting into a piping bag and decorate brownies or spread frosting on brownies.
