We love casseroles! They’re simple to make, very hearty, and make for delicious leftovers. This Ritz cracker beef corn casserole has a simple base of ground beef, corn muffin mix, corn, and cheese. That’s already a great dish, but we wanted to bump it up another notch with a buttery Ritz cracker topping. When you combine the ground beef and Ritz crackers with the sweet corn casserole, you get an incredible flavor explosion!
Step by Step Instructions
Ritz Cracker Beef Corn Casserole
- Brown Ground Beef
Preheat the oven to 350°F degrees and spray your casserole dish(es) with nonstick spray. Heat your pan to medium heat and cook ground beef until brown.
Evenly distribute the ground beef into the bottom of the casserole dishes. - Prepare Cornbread Mixture
In a large bowl, mix together the drained sweet kernel corn, cream-style corn, Jiffy corn muffin mix, melted stick of butter, and milk.
Pour the mixture evenly on top of the ground beef and bake for 25 minutes. - Make Ritz Cracker Topping
While the casserole is baking, crush up the sleeve of Ritz crackers and mix with the melted tablespoons of butter. After 25 minutes, take out the casserole from the oven and top with the cheddar cheese, followed by the buttered Ritz crackers.

Put the casserole back in the oven for another 20 minutes. Serve warm and dig in!
Ritz Cracker Beef Corn Casserole
The classic corn casserole is transformed into a hearty entree by adding ground beef to the bottom and a buttery Ritz cracker layer to the top.
Ingredients
- 1lb ground beef
- 1 box of Jiffy corn muffin mix
- 1 can of sweet kernel corn, drained
- 1 can of cream style corn
- 1/2 cup of butter (1 stick), melted
- 1 cup of milk
- 1 cup of cheddar cheese
- 1 sleeve of Ritz crackers, crushed
- 3 tablespoons of butter, melted
Instructions
- Preheat oven to 350°F degrees
- Spray two 9 inch round casserole dishes with nonstick spray
- Heat pan to medium heat and cook ground beef until meat is no longer pink. Evenly distribute ground beef into the bottom of the casserole dishes
- In a large bowl, mix together the Jiffy corn muffin mix, drained sweet kernel corn, cream style corn, melted stick of butter, and milk
- Pour evenly on top of ground beef and bake for 35 minutes
- While that's baking, crush Ritz crackers and mix with melted tablespoons of butter in a bowl
- After 35 minutes is up, take out the casserole and top first with cheddar cheese and then with buttered Ritz crackers
- Put back in oven for another 20 minutes

Feel free to use other sized casserole dishes if you do not have two 9 inch round casserole dishes. If you use one large casserole dish, casserole may need to bake for longer.

Questions You May Have About Ritz Cracker Beef Corn Casserole
I’m using two 9 inch round casserole dishes here but feel free to use any casserole dish(es) you already have. If just using one pan, make sure it’s large enough so the casserole cooks through or adjust to a longer baking time until casserole is set.
If you see that the casserole is still not solid, go ahead and stick it back in the oven and try baking for another 5-10 minutes or until the casserole is set and solid. If the Ritz crackers are starting to get too brown, cover the casserole with aluminum foil before putting back in the oven.
