One of the cuisines we eat out most often is Mexican food. We find their meats to just be so flavorful and well prepared. We decided to try our hand at making barcacoa at home using our slow cooker and it was amazing! It’s incredibly simple and packed with flavor.
Here’s what you’ll need
- Chuck roast beef
- White onion
- Garlic cloves
- Bay leaves
- Salt
- Garlic powder
- Onion powder
Let’s get started on this slow cooker barbacoa!
- Cut and sear beef
Heat skillet with oil over medium heat. Cut beef into large 1.5 to 2 inch chunks. Once skillet is hot, add beef chunks and sear on all sides. You may need to cook the beef in batches depending on the size of your skillet.
- Cut onions and add all ingredients to slow cooker
Cut a white onion in half, then cut one of the halves into quarters. Smash garlic cloves to easily peel off the skin. Add the seared beef, the quartered onions, bay leaves, garlic cloves, and seasoning to slow cooker.
- Set slow cooker
Cover slow cooker with lid and cook for 6 to 8 hours on high heat or until meat easily pulls apart. Occasionally move the beef around so that the top pieces move to the bottom. Remove bay leaves (you may remove the onions and garlic cloves if you like) and serve. That’s it! We like to enjoy our barbacoa in tacos with diced onion and fresh cilantro.

Slow Cooker Barbacoa
This tender and juicy barbacoa will be a surefire hit in your household!
Ingredients
- 3 lbs. chuck roast beef
- 1/2 medium white onion
- 6 garlic cloves
- 2 bay leaves
- 2 tsp table salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tbsp olive oil
Instructions
- Cut chuck roast into large 1.5 to 2 inch square chunks.
- Add 2 tbsp olive oil to skillet. Heat skillet over medium heat and place chuck roast chunks in skillet. You may need to sear beef in batches if skillet isn't large enough.
- Sear chuck roast on all sides and place in slow cooker.
- Cut a medium white onion in half, then cut the half into quarters. Smash 6 garlic cloves to easily peel off the skin. Place onion quarters and garlic cloves in slow cooker.
- Add salt, garlic powder, onion powder, and bay leaves.
- Set slow cooker to high heat and cook for 6-8 hours or until meat can be easily pulled apart. Occasionally move the beef around so that the top pieces go to the bottom.
- Remove bay leaves. You can optionally remove the garlic and onions as well. Serve with fresh diced onions and fresh cilantro.
