Who didn’t love making s’mores as a kid? We still do! The whole process of roasting a golden brown gooey marshmallow and sandwiching it with a sweet bar of chocolate between some crispy graham crackers is all worth it once you take that first bite! We can’t always make a fire out back or go on a camping trip, though. So we decided to bring those ingredients inside and add some delicious brownies into the mix for these amazing s’mores brownies!
Let’s get started on these s’mores brownies!
While your oven is preheating, finely and evenly crush your graham crackers with a rolling pin or food processor. Now you’ll mix the graham crackers, salt, sugar, and melted butter. You can use any utensil to mix with; we used a fork. Spray your baking pan with nonstick spray and pour your graham cracker mixture in the pan. You’ll want to press down the mixture into the bottom of the pan with a spatula or other utensil with a flat bottom to ensure you have an even graham cracker layer for the bottom of your s’mores. Pop it in the oven!
Time to make brownies!
While your graham cracker crust is in the oven, it’s time to prepare the brownies. You can use any brownie mix you like; we used a fudge brownie mix for extra decadence. Prepare the batter according to the instructions on the box. Once your graham cracker crust is ready, take it out of the oven and pour the batter evenly on top of the crust. Put it back in the oven and bake according to the instructions on the brownie mix box.
Let’s add our final ingredient!
Once the brownies are done, put at least enough mini marshmallows on the top to cover it. Put back into the oven and broil on high until the marshmallows are cooked to your desired color. Do not look away during this step because the marshmallows can burn quickly. (During my first attempt at making this, the marshmallows caught on fire lol.) If you can manage to wait before devouring, let it cool before serving.
Quick Tips for S’mores Brownies:
Before serving, we find that wetting our knife before each cut helps us cut it more easily without pulling the sticky marshmallows everywhere. Also, if the crust becomes a little crumbly, just pick up the crumbs and sprinkle them right back on top of the marshmallows. These s’mores brownies are meant to be messy and delicious!

S'mores Brownies
Ooey gooey brownies with a delicious graham cracker crust and toasted marshmallow topping. These s'mores brownies will become your new favorite dessert.
Ingredients
- 12 full sheets of graham crackers
- 1 tablespoon of sugar
- Pinch of salt
- 8 tablespoons (1 stick) of butter, melted
- 1 box of brownie mix
- Ingredients stated on brownie mix
- 1 10oz bag of mini marshmallows
- 8x8 baking pan or casserole dish
Instructions
- Preheat oven to 350°F.
- Evenly crush graham crackers using a food processor or rolling pin.
- Combine crushed graham crackers, sugar, salt, and melted butter and mix evenly.
- Spray baking pan with nonstick spray.
- Pour graham cracker crust mixture into the pan and press down onto the bottom to create an even bottom layer. Use something with a flat bottom to help you pack it down.
- Bake the graham cracker layer for 10 minutes.
- While that is baking, prepare brownies according to box mix instructions.
- Evenly pour the brownie mix on top of the graham cracker crust.
- Bake according to brownie box mix instructions.
- Once brownies are done, put enough mini marshmallows on the top to cover it.
- Put back into the oven and broil on hi until the marshmallows are to your desired color. Do not look away during this step because marshmallows can burn quickly.
- If you can manage to wait before devouring, let cool before serving.
Notes
